Closing our bottling cycle in Jamaica, the Pearl of the West Indies, here comes a thirty-year-old.
And immediately we feel like comparing the thirtysomethings of today's generation to those of our grandfathers. We discover that this rum resembles them all along: it is mature and chiselled by life, it has left its home long ago and the world has already shocked, surprised and filled it with experience. Time passes. Time flies. Time changes face. Well, don't be surprised if we like to philosophize on occasion. This spirit resembles the true passage of time.
We have tried to deliver this experience, if that's the word we want, without interfering except for the bare minimum. A sparkling and pungent nose, we feel southern fragrances such as almond, marzipan, sesame and Mediterranean spices. Maturity, concreteness sometimes almost greasiness. All qualities issuing from time and its baggage of processes, both aging and maturing.
To the mouth complete, appeasing and fragrant to the point where alcohol becomes a lesser perception. Rich and opulent tastes, as in a Sunday lunch. Tones of candid fruit, vanilla, tropical fruit panettone, and croissant are the corollary of sparkles of mint, mimosa and spring flowers. We approach greedily, and we retreat fulfilled, sated and conquered.
