And then one day man ceased his wanderings, and chose and colonised the remotest corners of the Earth. Around his dwellings sprang up farms overlooking the fields, and stables overlooking pastures.

The early Scots encouraged the rearing of cattle one day to become famous such as Angus, now renowned across the world. Its flesh has not lost the genome of its land of origin.

We love to imagine that the trace they leave in the ecosystem somehow percolates into the spirit we have aged and placed inside this bottle.

To the nose uncouth, strong and imposing. Sensations and tones hurtling towards our nostrils with the greasiness and fragrance of grilled meat. As the smoke of a summer flame, we witness a symphony of all that is balsamic, the green of the prairies, and the wood of the forest.

In the mouth, pasty, succulent, and displaying an opulence which borders on the shameful.

Beautiful, shocking, fulfilling.

As it takes on life in the glass after a few moments, everything changes and tends towards the smoky, stabilising into a rougher and more muscular form.

Don't settle down and sit in one place. Move around, be nomadic, make each day a new horizon.
